Here I am, on a Saturday without a video to post. I have at least 10 videos I've made with accompanying blogs... what's the hold up? Editing.... I hate editing the videos. It's not like it isn't fun or creative, I like that part, it just takes FOREVER!!! Hours or days sometimes. I've been so busy with work and other projects that every time I think about the videos I feel bad about not getting them edited and wonder when on Earth I'll have the time (and motivation) to do it. I've also been watching other people's cooking videos and my goodness they have some of the nicest/clearest/perfect videos I've ever seen. I'm not here to win awards or do this for any other reason than for my teachers, friends, and family... I'm just in that "I'm too busy, not caring much about it, feeling bad about not caring, wishing I had advance filming equipment, a studio, camera crew, editing crew, makeup crew, and the latest technology and a super advance computer" kind of mood.
Well, while I'm typing I guess I can fill in the last few months. After our big school break in December we started the year off doing some workshops. That was exceptionally wonderful and very productive.... also.... kept the busy factor high.
We had off for a few days for Chinese New Year this week. Here are some more cutie pictures for you!!
In March, for our Birthdays we'll be heading to Vietnam! Just a week though and only two cities: Saigon (Ho Chi Minh) and Mui Ne. Until next time 新年快乐! Happy Chinese New Year!
Food, travel, and health are my primary focus in this blog. I've lived in China, Taiwan, and Malaysia and have traveled to many countries. I want to really focus on what I see around me, especially when it comes to the health of a culture or society. Valentines Day Spicy Kimchi Soup!
Spice it up this Valentines Day with some spicy Kimchi Soup! You may or may not have your lover running at or towards you this Vday. Depends on the spice level..... you know what I mean.
So, when I made kimchi for the first time I realized I had a ton of kimchi left. I went on YouTube and saw a recipe for kimchi soup and thought, hmmmmmm I'll give it go with the ingredients I have to see if it turns out well. I have to admit it's super kimchi-eee-esk. Meaning it's too much kimchi flavor for me. The chunks were also a bit big. So, I took the soup when it was cooled blended it with a can of diced tomatoes and sure enough it was much smoother and less kimchi-overwhelming-flavor-esk.

Ingredients:
2 cups of kimchi
1/2 carrot
1 c chopped onion
2 tbsp garlic
2 tbsp chives
1 block tofu
seasonings
*** basically add any protein and soup veggies/seasonings you want
1. Throw all that stuff in a heating apparatus (rice cooker, slow cooker, or stove top).
2. Cook for 30min, checking every 5 to 10 minutes.
3. Cool and blend (with a can of tomatoes) or enjoy as is.

I am lotus ROOOT!
If you haven't seen Guardians of the Galaxy my title may have just flown past your brain. No worries. Lotus roots! One of the most delicious roots the Earth has given us is by far the most intriguing to those who've never seen/eaten/felt one before. Its mystery keeps westerners up late at night. If you wanted to cook a lotus root it's actually quite simple. First try to stir-fry it. Oil, garlic, some soy sauce, salt, and pepper... stir-fry until golden and serve. After you try it out you'll see it has a nice taste (reminiscence of a chestnut- both texture and flavor) and then you can go crazy! Check out some of the recipes out there (suggest Chinese recipes). Don't be afraid.... this root is your friend!
